Easy Cashew Mayonnaise

Vegan Cashew MayonnaiseTime to Prepare:                  10 Minutes

Number of Servings:               12

Ingredients:

1        Cup(s)               Cashew nuts, raw
1/2   Teaspoon          Onion powder,  optional
1/2   Teaspoon          Salt
1        Tablespoon      Cider Vinegar or Lemon Juice
1/2    Cup                   Water

Mix everything together in a blender until smooth.  The longer you blend, the thicker the mixture will become.  You can add more water if you water a thinner consistency.

Optional:

Soak Cashew nuts in water for 2 hours or overnight and then dump water.  Use 1/3 cup of water instead of 1/2.

If desired, add 1/4 cup of olive oil slowly while blending. Just keep in mind that this adds a lot of unneeded calories.
