These are basically a Lara Bar but rolled into balls to make eating easy. These are great to serve at children’s parties and take on picncis. Shape them into a bar if you want to take them hiking. Kids say they taste like candy.
1/4 cup of almonds
1/4 cup of cashews
8 oz of dates
1 tsp vanilla
Juice from one lime
Yields about 16
Process almonds and cashews in a food processor until chopped into small pieces. Be careful not to turn it into powder or butter by pulsing until just the right size. Add dates, vanilla and juice from one lime and mix until the mixture starts to come together and form a ball. Hand mix in shredded coconut. Place additional shredded coconut onto a plate or wide bowl. Roll balls of the date mixture into desired size and then roll in shredded coconut.
