Creamy Broccoli Soup

| Ingredients: |
| 4 | Cups | Broccoli |
| 1 | Tablespoon | Mustard |
| 2 | Tablespoons | Almond butter |
| 1 | Cup | Chopped Onions |
| 2 | Medium | Peeled potatoes |
| 3 | Teaspoons | Poultry seasoning |
| 2 | Cups | Soy milk or any other non dairy milk |
| 2 | Cups | Vegetable Broth |
| Instructions: |
| Add broccoli, broth, potatoes, |
| seasoning and onion to a large pot. |
| Bring to a boil, then lower to a simmer |
| and cover. Check for tenderness of |
| potatoes in 10 minutes. |
| Stir in almond butter and mustard. |
| Transfer soup to large glass or metal |
| bowl. Allow soup to cool. Blend soup |
| and a some of the soy milk in batches |
| and return to pot. Stir while reheating |
| over medium heat until heated through. |

| Good with vegan baco bits and |
| homemade biscuits. |
