These are unbelievably good and only 105 calories. Kids love them. Enjoy!
1/3 Cup Applesauce (I make my own by blending 2 ripe apples)
3 Large Bananas, raw, very ripe, mashed
1/3 Cup Organic Vegan Sugar, Granulated
1/4 Cup Soy milk (or other non dairy milk)
1 2/3 Cup White whole wheat flour
3 Teaspoons Egg Replacer, Ener-G or other (I just add it dry to flour)
1/2 Teaspoon Salt
1/2 Teaspoon Cinnamon, ground
1/4 Teaspoon Baking Powder, Aluminum free
1 Teaspoon Baking Soda
Preheat oven to 350 degrees.
In a large mixing bowl, mix bananas, apple sauce, sugar and milk
together well.
In a medium bowl, mix the flour, egg replacer, baking soda, baking powder, salt and cinnamon.
Add the flour mixture into the wet ingredients and stir just until moist. Do
not over mix. Add more soymilk if needed to reach a consistency between
pancakes and cookie dough.
Pour into muffin tins. Cook for about 15 minutes. They are done when a knife
comes out of the center clean. Makes about 12 muffins. I always double these
because they go fast and can freeze well.
You can always use this for banana bread but it will need to cook for 30-40
minutes and cool for 15 before cutting.
